Baingan bharta is an Indian vegetarian side dish consisting of a spicy grilled eggplant mash that is sautéed with butter, onions, tomatoes and spices. ‘Baingan’ is a Hindi word for ‘Eggplants or Brinjal’ and bharta is a word meaning ‘mashed’. Served with rice.
